When it rains, it pours! As soon as local corn season starts, we're incorporating it into our main dishes, infused broths and even our fermented vegetable creations. Here, our first corn of the season is cultured with cabbage and red peppers for a mild probiotic relish that screams "Let's Be Frank Hotdogs!" Perfect with any grilled meats, it would also be lovely in a salad, as a side dish or on it's own as a snack.
